Chicken and Sausage Jambalaya
Ingredients:
1 lb. of Boneless Chicken Breast
1 package of the Smoked Sausage of Your Choice
1 Basil leaf
1 Medium or Large Size Onion
1 Can of Hunt's Petite Diced Tomatoes
1 Jalapeno Pepper
1 Large Yellow Bell Pepper
1 Small Green Bell Pepper
1 1/2 cubes of Chicken Bullion
1 Celery Stick
1 Large Zucchini
2 Tablespoons of Butter or Margarine
Salt and Pepper
Garlic Powder
Dried Parsley Flakes
Rice
Directions:
1. Cut Chicken, Smoked Sausage, Yellow Bell Pepper, Green Bell Pepper, Onion, and Zucchini into chunks.
2. Using low heat, put 2 teaspoons of Butter in the pan, then add the diced Bell Peppers and Onion to the pan.
3. Add in 1 teaspoon of Garlic Powder and let the vegetables simmer.
4. Add in the uncooked Chicken and brown the Chicken on both sides. They're should not be any pink left inside the chicken.
5. Add in the Smoked Sausage and cook the Sausage until it is done.
6. Add in the Zucchini and Basil leaf to the pan.
7. Add the Bullion Cubes and the Diced Tomatoes to the pan. Add in the Juice from the Can also.
8. Let the mixture simmer 5 minutes so that the tomatoes start to release some of its juice in the pan.
9. Next, add in as much or as little water as you like depending on how much liquid you want the Jambalaya to have.
10. Bring the Jambalaya to a low boil for 10 minutes. Add in as many or as little of the Parsley Flakes as you like.
11. Let boil for 10 minutes.
12. Cook Rice per the instructions on your package.
13. Serve Jambalaya over a bed of rice. Enjoy!

Salmon Cakes
Ingredients
1 can of salmon
1-2 eggs
Garlic (Optional)
Salt
Pepper
Parsley
Onions
4 Tablespoons of Vegetable Oil
Directions
Open can of salmon and take out any of the bones
(Judge how many eggs you would like based on how moist you want the salmon mixture to be)
Beat 1-2 eggs and add eggs to salmon and mix
Chop one small onion and add to Salmon mixture
Add Garlic, Salt, Pepper, Parsley to taste
Shape into 2 ounce patties
Heat oil on low heat in large skillet. Cook 5 minutes on each side.

Chocolate, Caramel, and Peanut Butter Fiber Bars
Ingredients
1 cup Rice Krispies Cereal
1 cup Plain Quick Cook Oatmeal (Quick Cook Oatmeal bakes faster and better)
3/4 cup Nestle Toll House DelightFulls Milk Chocolate with Caramel Filling Baking Morsels
1/4 - 1/2 cup Dry Milk
1/2 Teaspoon Salt
1 Tablespoon Sugar
2 Tablespoon of Melted Margarine or Butter
2 Tablespoons of Peanut Butter
1 Teaspoon of a Fiber Supplement (Example Metamucil)
1 Can of Buttered Flavored Spray
Yields 1-2 Servings
Directions
1. Mix Rice Krispies, Oatmeal, Nestle Morsels, Dry Milk, Salt, Sugar and Fiber Supplement together in a large bowl.
2. Melt Peanut Butter and Butter or Margarine and add to dry ingredients and stir so that everything is incorporated.
3. Add Water and mix. Let mixture sit for 5 minutes to absorb the water
(Water should be added a little at a time until a sticky mixture forms.
You should not need to add any more water than 1/4 cup.
4. Grease aluminum foil and preheat oven to 325 Degrees Fahrenheit.
5. Roll Mixture into a large ball and press it down into a square shape. Put mixture onto aluminum foil. Spray the top of the Square Mixture.
6. Bake for 10-15 minutes on one side. Flip the square over. Spray the other side of the Square Mixture.
I put aluminum foil on the top of the mixture, place my hand on the aluminum foil and then flip it over.
7. Bake an additional 10-15 minutes until the middle is fully cooked.
8. Let Mixture Cool. Cut into Bars and Serve.
Prep Time: 15 minutes
Cook Time: 30 or so minutes
Ready In: Approximately 45 minutes
