Grilled Ham and Cheese Sandwich with a Twist

Serving : 1 sandwich
1 tablespoon vegetable oil
1/4 cup roughly chopped red bell pepper
1/2 cap of portobelllo mushroom, sliced
1/4 medium onion, sliced
1 cloves garlic, chopped or a 1/2 teaspoon of garlic powder
1/4 teaspoon of parsley
1/4 cup of sweet peppers (optional)
3 slices of your favorite ham, thinly sliced
Salt and black pepper
1 slice each, of provolone, and Swiss
2 slices of your favorite bread
Preheat an electric sandwich grill, press or pan.
Heat the oil in a medium skillet over high heat. Add the bell pepper, mushroom, onion, parsley and garlic to the grill or pan. Put in salt and pepper to taste. Cook the vegetables, stirring occasionally, until lightly brown and soft, about 5 minutes. Transfer the mixture to a bowl. Add the ham to the skillet and cook, turning once, about 1 minute.
Layer the vegetable mixture, sweet peppers, ham, and cheese between the two slices of bread. Put the sandwich in the grill or pan. Grill both sides about 4 minutes.
