Parmesan Fish Sticks

Ingredients
1 (18-ounce) tilapia fillet, about 8 by 4 inches
1/2 cup all-purpose flour
1/2 teaspoon fine sea salt
1/4 teaspoon freshly ground black pepper
2 egg whites
1 cup grated Parmesan
1 cup seasoned bread crumbs
Olive oil, for drizzling
Directions
Rinse the tilapia fillet. Pat the filet dry with paper towels. Cut the fish in half to make 2 even fillets. Slice the fillets into 1/2-inch pieces of equal size.
Place the flour in a bowl and add salt and pepper to taste. Place the egg whites in another bowl and beat them for about 20 seconds. Combine the Parmesan and bread crumbs in a third bowl.
Coat the tilapia pieces in the seasoned flour. Remove excess flour by patting them. Dip the floured tilapia in the egg whites and afterwards to the Parmesan mixture. Place the breaded tilapia pieces on an oiled baking sheet. Use the amount of olive oil you desire so that the fish do not stick to the baking sheet. Bake for 15 to 20 minutes until golden brown.
